Yes. The sheets are currency-agnostic: type your own symbols and categories. Examples in the playbook are written in plain US English.
Live sales use Stripe Payment Links baked into the offers (or set via NEXT_PUBLIC_STRIPE_PAYMENT_LINK_*). If you clear those and also omit Checkout API keys/Price IDs, the button will say payments are not configured instead of charging a card.
